This recipe isn't going to be like my banana cupcakes recipe where I've got exact measurements, this is more add what you have at any quantity and you're done. I know a few people who hate it when recipes allow too much room for error such as quantity of salt to amount of vegetables and pasta but I've never made this using measurements or exact quantities.
What you'll need:
- Pasta - penne, spaghetti, fusilli, farfalle (whatever you have on hand or prefer)
- Garlic oil (or just infuse garlic into oil for 10-20 minutes)
- Vegetables - celery, mushrooms, carrots, tomatoes, leeks, onions, broccoli (any types of vegetable you want or have)
- salt, pepper, dry corriander or preferred herb
What you'll need to do:
- Boil dry pasta with a pinch of salt in a pot until it's cooked, rinse in cold water and drain.
- In a pan heat garlic oil and add the preferred vegetables keeping in mind, things like carrots and broccoli take longer to cook then mushrooms and onions. Start off with high heat reducing the heat when vegetables are starting to soften and adding a drizzle or two of water to help cook the vegetables without them burning if needed.
- Season the vegetables with the salt, pepper and preferred herbs.
- Turn off heat and mix in the pasta.
- Plate up the pasta and enjoy.
This meal is something I have when I have left over vegetables in the fridge and I don't feel like vegetable soup (from the picture you can see I only had carrots and celery). I hope you didn't have too much trouble cooking this dish, you could always add other ingredients to suit your tastes like curry powder, chicken powder or mushroom powder (these two powders have salt so don't add salt if you use these), or chilli powder for a kick of spice.
