Cook With Me #3 - Rocket Salad With Grilled Fish


Who doesn't like a nice fresh salad to go with a nice piece of perfectly cooked fish.. well unless you don't like seafood or are allergic. This dish is perfect for days where you don't have time to cook and just wants a meal that doesn't take time to prepare and make. Grilled fish on top of a fresh rocket salad is one of my favourite things to eat when I don't have time to make anything and it's too hot to go for a bowl of soup.

 What you'll need:
  • Rocket (estimate how much you might eat)
  • Dressing (Olive oil, lemon juice, a pinch of salt and sugar, basil or coriander)
  • Fish fillet (Cod, Salmon, Basa, or Barramundi)
  • Seasoning for fish (salt, pepper, coriander, onion powder)
  • Garlic olive oil (infuse a clove of garlic in olive oil)
Recipe:

  1. Mix a little olive oil, lemon juice, a pinch of salt and sugar and a sprinkle of basil in a bowl, this is your dressing for the salad.
  2. Wash the rocket and drain all the water before pouring in the dressing and tossing the salad.
  3. Season the fish fillet of your choice with a bit of salt, pepper, onion powder, and coriander.
  4. Lightly grease a pan or grill with garlic olive oil and letting it heat up before placing the fish on the grill.
  5. Cook until the fish is no longer clear/uncooked or when the fillet is golden brown.
