I love banana bread but sometimes they can be a little dry so I usually go for the alternative and bake banana cupcakes to go along with my cup of tea. Here is a recipe I learnt through trial and error in simple steps anyone can easily follow.
What you'll need:
- 100g unsalted butter
- 70g caster sugar
- 1 egg
- 1 ripe banana, mashed
- 2tbsp milk
- 1tsp ground cinnamon
- 100g plain flour
- 1tsp baking powder
- a pinch of salt
- mini cupcake pan
- mini cupcake liners
Recipe:
- Preheat oven to 160 degrees celsius.
- Whisk the softened butter and sugar until they lighten up into a pale yellow colour.
- Add in the room temperature egg and mix well. Add in the banana and milk and do the same.
- In a separate bowl mix the cinnamon, flour, baking powder and salt together. Add a third of this into the wet mixture and mix until smooth. Repeat until the dry ingredients have all been combined into the wet mixture.
- Line the cupcake pan for 16 mini cupcakes and fill them with the banana cupcake mixture about 2/3 high.
- Bake cupcakes for 20- minutes, checking it once at the 20 minute mark to estimate how much longer it will take.
- Let the cupcakes cool down slightly, remove them from the pan and let them cool completely before enjoying them with your favourite hot beverage.
